Steak, Sweet Potato and Avocado Salad

Steak with sweet potatoes is the ultimate comfort dish – you will never want a plain steak again.

SERVES 2

2 x 200g steaks (about 3cm thick), whichever is your favourite cut

2 tsp Steak Rub (see here )

1 tbsp olive oil

a good cube of unsalted butter

For the sweet potato and avocado salad

200g sweet potato, cut into 1cm cubes

1 tbsp olive oil

salt and freshly ground black pepper

1 avocado, sliced

2 large handfuls of salad leaves

2 tbsp pine nuts, toasted

For the dressing

1 tsp Dijon mustard

½ small garlic clove, crushed

1 tbsp balsamic vinegar

3 tbsp olive oil

Preheat the oven to 200°C/Gas mark 6.

To start the salad toss the sweet potato cubes in the oil, season with salt and pepper, then roast in the preheated oven for 25 minutes until soft and slightly caramelised.

Rub the spice mix over both sides of the steaks and fry them in the olive oil and butter for 2 minutes on each side. Leave to rest on a plate for a few minutes, then slice on the angle.

For the dressing mix together the mustard, garlic and balsamic, then add the oil. Season with salt and pepper.

Toss together the roasted sweet potato, avocado, salad leaves and pine nuts. Add the steak slices and dressing and serve.
